CHERRY COOKIE 
1 1/2 c. plus 2 tbsp. flour
1 tsp. salt
1 c. butter
1/2 c. sugar
2 egg yolks
1 tsp. vanilla
4 tsp. grated orange rind
2 tbsp. lemon juice
2 egg whites
1/2 to 1 c. ground nuts
23 maraschino cherries, cut in quarters

Mix and sift flour and salt. Cream butter well; add sugar and keep beating until light and fluffy. Add beaten egg yolks, vanilla, orange rind, and lemon juice; mix well. Add sifted dry ingredients gradually and mix. Chill dough. Mold into small balls about the size of a hickory nut. Dip each ball in slightly beaten egg white and roll lightly in ground nutmeats. Place on greased cookie sheet and press cherry on each ball. Bake at 350 degrees about 18 minutes. Remove from pan immediately.
