CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can pie filling, cherry blueberry, etc.

Soften cream cheese. Combine remaining ingredients and mix until light and fluffy using a mixer. Put a vanilla wafer in each muffin tin. Fill 2/3 full. Bake at 350 degrees for 10 to 15 minutes. Watch carefully. Cool and top with pie filling. Makes 24.
