DIABETIC APPLESAUCE CAKE 
2 c. raisins
2 c. water
2 c. flour
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. baking soda
2 c. unsweetened applesauce
2 whole eggs
2 tsp. liquid sweetener
1/4 tsp. nutmeg
3/4 c. cooking oil

Cook raisins in 2 cups water until dry. Cool. Sift flour, soda, salt, cinnamon and nutmeg together in large bowl.

Combine oil, eggs, applesauce, liquid sweetener and vanilla. Beat well, then add the dry ingredients and blend. Add raisins and blend well. Preheat oven to 350 degrees. Pour into greased floured tube pan. Bake 45 minutes or until done.
