WHITE BREAD
2 tbsp. dry yeast
2 tbsp. sugar
1/2 c. warm water

Mix well and let set 10 minutes.

3 1/2 c. warm water
1/2 c. sugar
1/2 c. lard or vegetable oil
About 11 c. flour

Using large bowl, combine the yeast mixture and warm water, sugar, oil and 4 cups flour. Mix well with mixer. Add flour, 2 cups at a time, until you have a smooth dough. When mixing by hand, you may use only 10 cups or so. If using dough machine, you may use more.

Cover and let rise double. Punch down and let rise again. Punch down and divide into 4 equal loaves. Put into well-greased 9x5 inch loaf pans. Let rise 1 hour. Bake at 375 degrees until golden or sounds hollow when tapped. Cool on racks brushing tops with butter.

If freezing, wrap while still a little warm for a chewy crust. Makes 4 nice loaves.
