RITZY CHICKEN 
3 whole chicken breasts or 6 halves, skinned and boned
3 tbsp. olive oil
1 pt. heavy cream
2 tbsp. chopped parsley
2 eggs, lightly beaten
1 c. seasoned bread crumbs
6 oz. sliced Mozzarella cheese
1 c. grated Parmesan cheese
Salt and pepper to taste

Preheat oven to 350 degrees. Dip chicken breasts into beaten eggs, coat with bread crumbs. Heat oil in frying pan on medium heat. Add coated chicken and brown lightly on both sides. Remove from pan and place in baking dish, topping with slice of Mozzarella cheese. Mix together remaining ingredients in saucepan and cook until mixture gets hot and thickens. Pour over chicken and bake for 25 minutes.
