GREEN HERBED RICE 
3/4 c. chopped fresh parsley
1/4 c. chopped fresh basil
2 tbsp. chopped green scallion tops
1/4 c. olive oil (approx.)
3 c. cooked long grain rice, heated
Salt and fresh ground pepper to taste
1 tbsp. unsalted butter
Freshly grated Parmesan cheese, for garnish

Put parsley, basil and onion tops in food processor. With machine running, add just enough oil through food tube to make a smooth puree.

Toss pureed mixture into hot rice with salt, pepper and butter. Serve immediately or keep warm in 225 degree F. oven. Sprinkle with cheese before serving. Serves 4.
