QUICHE FLORENTINE 
1 can white chicken
1 can chunky chicken soup
1 c. Mozzarella cheese
3 eggs
1 c. small curd cottage cheese
1 pkg. spinach, thawed
1/4 onion, chopped
2 (9-inch) pie shells
1 can water chestnuts

Combine chicken, soup, grated cheese, eggs (beaten), cottage cheese, water chestnuts (drained), spinach (drained) and onion. This may be frozen in 2 small freezer bags. Thaw and pour each into a frozen pie shell. Cover with Cheddar cheese slices (optional).

Bake at 350°F for 1 hour. To deliver as a gift, bring frozen filling and frozen pie shell with baking instructions.
