THE VERY BEST ZUCCHINI BREAD 
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1/2 tsp. nutmeg
3 c. sugar
3 eggs
1 c. vegetable oil
3 tsp. vanilla
2 c. zucchini, grated
1 c. apple, grated
1 c. walnuts or pecans

Mix all dry ingredients together. Mix all other ingredients in a separate bowl. Combine the dry and wet ingredients.

Bake in 2 loaf pans for 45 - 60 minutes at 350°F. For muffins decrease time to 20 - 25 minutes.
