LOW CAL ZUCCHINI BREAD 
1/4 c. butter
2 tbsp. sugar (may also add 5 pkg. Sweet & Low)
2 eggs
1/2 c. plain nonfat yogurt
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
1 1/4 c. sifted flour
1 tsp. cinnamon
1 tsp. pumpkin pie spice
1 1/2 c. shredded zucchini

Cream butter and sugar, add eggs and beat. Add yogurt and vanilla, then add rest of ingredients. Spray loaf pan with Pam and then wax paper the pan, spray again. Bake in 350 degree for 1 hour, turn off oven and in oven until cool.
