CHICKEN AND RICE SQUARES 
2 tbsp. onion, finely chopped
1/4 c. butter
1/3 c. flour
1 tsp. salt
1/4 tsp. poultry seasoning
2 c. cooked chicken, chopped
2 c. cooked rice
2 eggs, beaten
2/3 c. bread crumbs
1/8 tsp. pepper
2 c. broth, water or milk

Cook onion in butter until soft. Stir in flour, salt, pepper and poultry seasoning. Add broth, stirring constantly until sauce is smooth. Cook until thick. Combine chicken, rice and eggs. Fold into sauce. Pour into greased baking pan and sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes or until set
