RED-EYE FRIED RICE WITH COUNTRY
HAM
 
4 c. strong black coffee, brewed
2 c. rice
1 tbsp. bacon grease
4 center-cut country ham slices (remove bones), diced to 1/4-inch squares
2 c. chopped onion

Bring coffee to a boil. Add rice and cook per directions. In large frying pan, heat bacon grease on medium and add diced country ham and cook until light brown in color. Add onions and cook until the onions are transparent. Then fold in cooked "coffee rice." Heat thoroughly, stirring occasionally. Serve hot.

Makes 6 to 8 servings.
