OPA'S STUFFED PORK TENDERLOIN 
2 pork tenderloins

CROUTONS:

6 bread slices, oil

MEATLOAF:

Lean hamburger
1 egg
Salt and pepper to taste
2 onions, chopped
4 tbsp. Carnation milk (approximately)
Nutmeg to taste
Maggi seasoning to taste
Homemade croutons

Ginger to taste

Make croutons by cutting bread slices into cubes and cooking in a little oil until browned.

Make meatloaf by mixing all of the meatloaf ingredients together. You can use your own meatloaf recipe if you prefer.

Cut pork tenderloins in half until 3/4 through. Open and pound until 1/2 inch thick. Sprinkle both sides with salt, pepper and ginger.

Oil shallow oven pan and put in first tenderloin. Shape meatloaf and set on top of tenderloin. Cover the meatloaf with the second tenderloin and sprinkle more liberally with ginger. Make a tent out of tinfoil and cover the meat.

Make sure it does not touch the meat and leave both ends open. Bake for a solid hour at 325 degrees F. Remove tinfoil and bake another 15 minutes until lightly browned.
