PORCUPINE MEATBALLS 
Very good. Kids and adults love these!!!

2 lb. ground beef
1 1/2 cups quick-cooking rice (Minute)
2 (10 oz. ea.) cans tomato soup
1 can water (use empty soup can)
salt and pepper, to taste
shredded cheese (optional)

Preheat oven to 350°F.

In a large bowl add ground beef, rice. Season with salt and pepper. Once mixed well roll into balls and place in a baking dish.

Bake at 350°F for about 35 minutes until meatballs are done.

In a large pot (I use a Dutch oven) add both cans of tomato soup and one can of water. Mix well then add meatballs, cook about 15 minutes.

Serve topped with shredded cheese, if desired. Enjoy!
