SPINACH SQUARES 
1 (10 oz.) pkg. frozen chopped spinach, thawed
1/3 c. chopped onion
1 garlic clove
4 lg. eggs, well beaten
3/4 c. melted butter
7 drops Tabasco sauce
3/4 c. cornmeal
1 c. flour
1 tsp. baking powder
1/8 tsp. salt
1/8 tsp. thyme
1/8 tsp. oregano
3/4 c. Parmesan cheese
1 c. shredded sharp Cheddar cheese

Squeeze spinach dry in sieve. In food processor fitted with metal knife, process about 1/4 of a medium size onion, garlic and the spinach. Add eggs; combine well.

Combine flour, baking powder, salt, thyme and oregano in large mixing bowl; add cornmeal and Parmesan cheese to flour mixture. Mix Tabasco sauce with melted butter; add this mixture to the flour mix. Stir only until flour mixture is moistened. Stir in Cheddar cheese. Pour mix into greased 9x9x2 inch pan. Bake at 350 degrees for 25 minutes. Cool in pan 5 minutes. Cut into squares. Makes 48 to 56 squares.
