SPINACH CHEESE SQUARES 
2 (10 oz.) pkg. frozen chopped spinach
4 tbsp. butter
1 sm. onion, finely chopped
4 tbsp. flour
1/2 c. powdered non-dairy creamer
2 c. boiling water
1 c. grated American cheese
1 tsp. salt
1/8 tsp. pepper
2 eggs, slightly beaten

Cook spinach as package directs; drain and set aside. In a heavy saucepan, melt butter over low heat until frothy. Add onion and saute until soft and golden brown. Blend in flour; cook and stir 1 minute without covering. Add non-dairy creamer, then boiling water all at once, blend well. Increase heat. Cook and stir until sauce comes to a boil and thickens. Add cheese and seasonings, stirring until cheese melts. Remove from heat, add beaten eggs and drain spinach, blending well. Turn into buttered 1 1/2 quart baking dish. Set in a pan of hot water. Bake at 350 degrees for 30-40 minutes or until set.
