CARAMEL ICE CREAM 
2 qts. milk
1 pt. whipping cream
2 1/2 c. sugar
1/2 c. flour
1/8 tsp. salt
7 eggs
3/4 tsp. maple flavoring
3/4 tsp. black walnut flavoring

In iron skillet, place 1 cup sugar and caramelize. Add 1 quart milk. Do not boil. Keep at low heat.

Beat eggs, add 1 quart milk, scalding, do not boil. Mix 1 1/2 cups sugar and 1/2 cup flour, add to liquid mixture. Cook until a soft custard is formed. Cool. Add cream and flavorings when ready to freeze.

Makes 4 quarts.
