NO FROSTING APPLE CINNAMON CAKE 
2 eggs, beaten
1 1/2 c. sugar
1/2 c. oil
3 c. apples, thinly sliced
1 c. chopped nuts
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 tsp. salt
2 c. flour
1 1/2 tsp. baking soda

Note: Other fruit such as pineapple or raisins can be used instead of apples.

Beat eggs in bowl; add sugar and oil; mix well. Add apples, nuts, cinnamon, nutmeg and salt. Combine flour and baking soda and add. Pour batter into greased and floured 8 inch square pan. Bake at 350 degrees for 45-55 minutes. Can be served warm.
