PEANUT BRITTLE 
2 sticks unsalted butter
1 c. sugar
1/4 c. water
1 1/2 c. pecans

Melt butter in saucepan. Add sugar and water. Stir constantly until light brown on medium to medium high heat (slow bubble) for about 8 minutes (depending on heat). Don't let it get too brown because it will begin to crystalize. Pour into ungreased pie pan. Add pecans. Set till hard. Break into pieces.
