CHICKEN WILD RICE SALAD 
3/4 c. wild rice
2 c. water
3 c. cooked, cubed chicken or turkey
2/3 c. mayonnaise
1/3 c. milk
1 tsp. onion powder
1/4 tsp. dried tarragon
1 bunch chopped green onions
1 can sliced water chestnuts
1/2 lb. seedless grapes
1 c. cashews

Rinse wild rice and place in pan with 2 cups water, bring to boil, reduce heat and simmer about 45 minutes until tender; drain. Combine rice, chicken or turkey, onion, chestnuts, grapes and cashews. Combine mayonnaise with milk, onion powder and tarragon. Mix into chicken rice mixture, serve chilled on lettuce leaves.
