WILD RICE CHICKEN SALAD 
1 c. green grapes
3 c. diced chicken breast
1/2 c. wild rice, raw (makes 2 c. cooked)
1 1/2 c. broth (from chicken), cook rice in this broth & add 1 bouillon cube to broth
1/2 c. thin sliced celery
1/2 c. toasted almonds, thin
1/2 c. mandarin oranges, drained
2 tbsp. chopped green onions

DRESSING:

2 tbsp. oil
1/2 tsp. salt
1 tsp. vinegar
2 tsp. sugar
1/4 tsp. pepper
1/4 tsp. dry mustard
1 c. Hellmann's mayonnaise

Mix and chill 1 1/2 hours. Serves 6.
