PUD'S APPLE PIE 
6 1/3 tbsp. chilled butter
1 c. unbleached white flour (I use all purpose)
1/2 tsp. salt

For pie crust, cut the flour, butter and salt together (it should be dry and lumpy). Add 2 tablespoons ice water and mix. It should stick together. Mush it into a ball. Pat dough into bottom and up the sides of a 9 inch deep dish pie plate using the flats of your fingers.

APPLE FILLING:

5 - 7 tart apples (Granny Smith)
1/2 c. sugar
3/4 tsp. ground cinnamon
1/3 c. sugar
3/4 c. all purpose flour
6 tbsp. butter

Pare apples; core and cut into eighths. Arrange in unbaked pastry shell. Mix 1/2 cup sugar and 3/4 teaspoons cinnamon; sprinkle over apples. Mix 1/3 cup sugar with 3/4 cup flour; cut in butter until crumbly. Sprinkle over apples. Bake at 305 degrees for 1 hour or until it tests cooked to you. If pie crust browns too quickly, cover edge with foil.
