ZUCCHINI RELISH 
1 1/2 c. green tomatoes
5 c. zucchini
2 1/2 c. onion
1 or 1 1/2 c. green bell peppers
1 large red pepper
1 large yellow pepper
1 tbsp. mustard seed
1 1/2 tbsp. celery seed
3 c. sugar
2 3/4 c. vinegar

Chop all vegetables. Add 1/2 cup salt and let soak overnight. Drain and rinse. Rinse and drain again. Mix sugar, vinegar, mustard seed and celery seed. Add to vegetables. Bring to rolling boil. Reduce heat; boil gently 20 minutes. Put in hot sterile jars and seal. Process in hot water bath 15 minutes.
