ZUCCHINI RELISH 
10 - 12 cups zucchini
4 cups chopped onions - by hand
3 cups chopped bell pepper
4 cups sugar
2 1/2 cups cider vinegar
4 tsp celery seed
2 T corn starch
1/2 tsp pepper
1/2 tsp dry mustard
1/2 tsp nutmeg
1/2 tsp turmeric

Wash, don't peel, cut ends off and shred in food processor. Add onions and bell pepper.

Sprinkle 3 T salt over and let set 3 or more hours.

Drain and rinse - squeeze by hand. In a large kettle bring to a boil the rest of the ingredients.

Boil a few minutes (about 30 min). Put into jars and seal.

Makes about 6 pints.
