ZUCCHINI RELISH | |
2 lg. zucchini (seeds out), grated 2 chopped onions 2 chopped green bell peppers 2 c. vinegar (5% acidity) 1/2 c. water 1 tsp. turmeric 1 tsp. celery seed Cover the first 3 ingredients with ice water and 1/4 cup salt. Let set for 1 hour; drain and wash twice. Combine the rest of ingredients and bring to a boil. Add relish and simmer for 10-15 minutes. Pour into glass jars and seal. |
