REAL BOSTONIAN'S CLAM CHOWDER | |
2 (7 oz.) cans minced clams, or an equal amount of fresh quohogs 1 big onion, minced 2 x 1 x 1 inch piece fat salt pork, minced 2 qts. milk Evaporated milk (optional) Potatoes to taste, maybe 4 Salt and pepper In a big heavy pot, cook onion and salt pork until wilted but not brown. Boil potatoes separately in water and cut in cubes. Add clams, potatoes, milk, some potato water, evaporated milk if you like, and a little salt and pepper to the pot. Heat and serve. NOTE: No salt is needed for fresh clams. |
