SPINACH PIE 
1 (9 inch) pie shell
1 egg
1/4 c. flour
1 pkg. thawed, chopped frozen spinach
4 tbsp. Parmesan cheese
1 lb. Ricotta cheese
1 med. onion, sliced thin
Dijon mustard
butter
Paprika

Prebake pie shell 5 minutes; cool. Saute onion slices in butter until golden. Spread bottom of pieshell with Dijon mustard. Place onion slices on top. Mix remaining ingredients. Put into pie shell. Dot top with bits of butter and paprika. Bake in 350 degree oven until brown and puffy; about 45 minutes.
