EGGPLANT PARMESAN 
2 med. eggplant
1 lb. ground chuck
1 lg. can tomatoes
1 can tomato paste
1 lg. bell pepper
1 lg. onion
Parmesan cheese
Mozzarella cheese

Cook hamburger stirring until it turns gray, add chopped onion and pepper. Cook until onion is transparent. Add tomato and tomato paste. Cook until it makes a fairly thick sauce. Add water as needed.

Slice eggplant 1/4 inch thick and soak in salt water 15 minutes. Rain, dip in flour and fry light brown each side. Layer sauce and eggplant and Parmesan cheese until all is used. Put Mozzarella cheese on top and bake 40 minutes at 350 degrees.
