RED PEPPER RELISH 
14-16 finely chopped red peppers "sweet"
6 c. sugar
2 tbsp. salt
1 qt. vinegar

Combine pepper and salt, let stand 3 to 4 hours. Add sugar and vinegar. Cook, stirring frequently, until thick, for about 45 minutes. Pour hot mix into hot half pint jars, leaving head room. Adjust caps and process 10 minutes. Yield about 6 half pints.
