GREEN OR RED PEPPER RELISH FOR
HORS D'OEUVRES
 
3 large green or red peppers, seeded and washed
1 1/2 c. white vinegar
1 hot pepper dried like hot red chilies or 1/4 c. fresh hot peppers
6 1/2 c. granulated sugar
1/2 bottle Certo (for jelly)
6 drops food coloring

Blend peppers and vinegar in blender. Put in 6 quart kettle. Add sugar to pepper mix from blender, stirring very well. Bring to a full rolling boil and add food coloring and Certo, stirring constantly. Pour into small sterilized baby food jars and seal with paraffin.

Serve over cream cheese and spread on crackers or snack breads. Delicious!

Whenever I've brought this to bake sales, it's gone! Nice to have canned on hand for a quick hors d'oeuvres.
