NO-BAKE PUMPKIN PIE 
1 c. pumpkin (canned, no sugar added)
1/2 c. cold water
1 env. plain gelatin
1 c. boiling water
2 env. vanilla flavored reduced-calorie milk beverage
2/3 c. sm. curd cottage cheese
1 1/2 tsp. vanilla flavored extract
1 1/2 tsp. pumpkin pie spice
1/4 c. nondairy whipped topping

Place pumpkin in blender, add cold water. Sprinkle gelatin over water. Let stand 1 minute. Add boiling water and remaining ingredients except whipped topping. Process until very smooth. Spray pie plate with nonstick cooking spray. Pour ingredients into plate. Chill thoroughly. Divide evenly and garnish each piece with 1 tablespoon of whipped topping. Makes 4 servings.
