TURKEY LOAF 
2 lb. ground uncooked turkey
1/2 c. chopped onions
1/8 tsp. pepper
2 1/2 c. bread crumbs
1/2 c. chopped celery
1/2 c. mushroom soup
1 egg, beaten
1/2 tsp. salt
1/2 c. cracker crumbs
1/2 c. seasoned dressing mix
1/2 c. chopped onion
1/2 c. water

Mix turkey, egg, 1/2 cup chopped onion, salt, pepper and cracker crumbs together. Roll out on wax paper as for jelly roll, about 1 inch thick. Mix bread crumbs, dressing mix, celery, 1/2 cup onion, soup and water together and spread over the meat. Roll up as for jelly roll. Place in 9 x 5 inch loaf pan. Thin another 1/2 cup mushroom soup with 1/2 cup water; pour over the meat loaf in the pan. Cover with foil. Bake at 350 degrees for 1 1/2 hours. Yield: Serves 12.

Hint: If you do not have the seasoned dressing mix, you can make your own by mixing the following spices: 1 1/2 tsp. sage 1/4 tsp. pepper 1 1/2 tsp. poultry seasoning 1 tsp. dry parsley flakes 1 tsp. salt
