MINNESOTA CUCUMBERS 
7 c. thinly sliced cucumbers
1 c. thinly sliced green pepper
1 c. thinly sliced onion
1 tbsp. celery seed
2 tbsp. salt
1 c. sugar
1 c. vinegar

Combine cucumbers, green pepper, onion, celery seed and salt in bowl; mix well. Stir sugar into vinegar in small bowl until dissolved. Pour over vegetables. Chill, covered, in refrigerator overnight. May store in refrigerator for 2 weeks.

(Original recipe called for 2 cups of sugar. You may wish to add more than the 1 cup of sugar listed.)
