OLD TIME BEET PICKLES 
cut tops to 1 inch from beet, wash good. Put in kettle of water and boil until they are tender (when skin will slip off easily). Place them in cold water to skin them. If too big, cut in quarters in a large dish pan.

Then you add 1 cup vinegar, 1 cup sugar and 2 cups water. Repeat this until the beets are covered. Get them real hot. Pack in sterilized jars with the solution from the beets. Seal good.
