TEXAS JACK 
4 slices bacon
1 med. onion, diced
1 med. green pepper, diced
2 cans (15 oz.) cans kidney beans
1 (8 oz.) can tomato sauce
8 frankfurters
2 tbsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
1/2 lb. sharp Cheddar cheese

Fry bacon (can use more if desired) until crisp, drain on paper towel. Cook onion and green pepper in 2 tablespoons of the bacon fat until soft. Add beans that have been partially drained, tomato sauce, seasonings, bacon and cheese. Stir in franks that have been cut into chunks. Bake at 350 degrees until hot and bubbly. This is good served with a green salad and French bread.
