APPLE SQUASH 
8 c. peeled, cubed butternut squash (3 1/2 lb.)
1/2 to 3/4 c. sugar
1/3 c. quick cooking tapioca
1/2 tsp. salt
Pinch of ground nutmeg
6 c. peeled, cubed Golden Delicious apples (3 lb.)
1 1/2 c. apple cider
3 tbsp. sugar
1/2 tsp. cinnamon

Bring large pot of salted water to boil. Add squash, return to boil and boil 2 minutes. Drain. Mix sugar, tapioca, salt, and nutmeg in large bowl. Add apples, cider and squash. Toss well. Spread evenly in baking dish. Mix sugar and cinnamon. Sprinkle over top of dish. Bake at 350 degrees for 1 hour or until squash is tender.
