PEPPER STEAK | |
1 (2 lb.) round steak Salt 1/4 c. flour 1 (6 oz.) can tomato paste 1 bay leaf 1 lg. onion, sliced 1 clove garlic, halved Pepper to taste 3 tbsp. oil 1 1/2 c. water 1/4 tsp. thyme 1 green pepper, cut into rings Cut steak into serving pieces. Rub with garlic; sprinkle with salt and pepper. Pound flour into steak. Heat oil in large skillet; brown steak well on both sides. Place steak in casserole. Drain oil from skillet. Mix tomato paste, water, 1/2 teaspoon salt, bay leaf and thyme; heat in same skillet. Arrange onion, green pepper rings over steak; pour tomato mixture over all. Cover tightly. Bake at 350 degrees for 1 hour to 1 hour and 30 minutes. Yield: 6 servings. |
