SWEDISH OMELET 
1 tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1 cup milk
4 eggs, separated
2 tbsp. butter

Mix flour, salt and pepper; add milk a little at a time until smooth. Separate egg yolks, beat; add to milk; mix, beat egg whites and fold in. Transfer to a warm pan that butter has been added. Cook slowly lifting from pan edges until set. Place under broiler a few minutes to set top.

This is the recipe my mom used to make her Swedish omelette. It was fascinating to me to watch her make this. When it came out from under the broiler it was so puffy, then it sank some but was still puffy. She would make her famous Swedish Meat spaghetti sauce and top each piece of omelette with the sauce. I am 66 and still can see, smell and taste all that yummy goodness. She was a widow and this was what we now call Brinner.
