ZITI & SPINACH PARMESAN | |
1 onion 3 cloves garlic Olive oil 1 can plum tomatoes 1/4 tsp. crushed red pepper 1 lb. fresh spinach, cleaned & chopped 6 oz. Mozzarella cheese, diced 1 c. grated cheese 1. In skillet, cook onion and garlic in olive oil about 5 minutes. 2. Chop the tomatoes and add them to the skillet with a little juice. Stir in pepper. 3. Boil sauce until most of the liquid has evaporated, about 20 minutes. 4. In a pot, cook the ziti. Drain and return to pot. 5. Add spinach, Mozzarella and 1/2 cup Parmesan cheese. Add the sauce and toss. 6. Transfer to shallow dish, sprinkle remaining Parmesan cheese on top and bake 10 minutes at 350 degrees. |
