SPINACH AND EGGS PARMESAN 
2 pkg. frozen chopped spinach
2 cloves garlic, minced
Salt & pepper to taste
4 eggs, slightly beaten
6 slices bacon
6 tbsp. olive oil
6 tbsp. Parmesan cheese, grated

Cook spinach and drain thoroughly (the drier the better). Saute bacon until crisp, drain and crumble. Heat in skillet - olive oil with garlic until garlic is golden brown. Add spinach, spreading over bottom of skillet. Season to taste and add 2 tablespoons cheese. Cook over medium-low fire, turning, until very hot. Add eggs, stir in well and keep turning until eggs are cooked, then add bacon. Sprinkle 4 tablespoons cheese on spinach when in serving dish.
