LADY BIRD'S SPINACH PARMESAN 
3 lbs. spinach, cooked, drained & chopped (or 4 (10 oz.) pkgs. frozen spinach)
1/2 c. grated Parmesan cheese
1/3 c. minced onions
1/3 c. heavy cream
1/2 c. melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 c. cracker crumbs

1. Preheat oven to 400 degrees. Grease 2 quart casserole.

2. In mixing bowl, combine spinach, cheese, onions, cream, 1/4 cup of the butter, salt and pepper; mix well. Turn into casserole.

3. In small bowl blend remaining butter and crumbs; sprinkle over spinach.

4. Bake in preheated oven for 15 minutes, or until golden.
