CHICKEN CACCIATORE | |
3-4 lb. chicken 1/2 c. flour 2 tsp. salt 1/2 tsp. pepper 3 tbsp. salt 3 tbsp. olive oil 1 onion, chopped 3 buds garlic 1 carrot, chopped 1 rib celery, chopped 1 can Italian tomatoes 1 tsp. basil 1/2 tsp. thyme 1/2 tsp. oregano leaves 1 bay leaf 1 green pepper, chopped 1/2 lb. fresh mushrooms 1/2 lb. spaghetti 1/3 c. Parmesan cheese Shake chicken in flour. Brown chicken in butter and oil. Remove chicken. Cook onion, celery, carrot, and garlic 5 minutes. Return chicken add tomatoes and seasoning. Cook covered 15 minutes. Add pepper and cook covered 15 minutes. Add mushrooms. Cook covered until chicken is tender. Salt may be omitted. |
