CHICKEN & PEACHES PIQUANT 
2 whole chicken breasts, skinned & boned (1 lb.)
Salt & pepper to taste
1 1/2 tbsp. vegetable oil
1 lg. onion, sliced
1 c. catsup
3 c. hot cooked rice
1 can (16 oz.) cling peaches, halved (drain & reserve syrup)
2 tbsp. soy sauce
1 lg. green pepper, 3/4" strips

Cut chicken into thin strips and place in bowl. Sprinkle with salt and pepper. Cook in hot oil about 2 minutes. Add onion and cook until tender. Blend catsup, peach syrup and enough water to make 2 cups. Add soy sauce. Pour over chicken. Cover and simmer 20 minutes. Add green pepper and peaches. Cover. Cook 5 minutes. Serve over rice. Makes 4 servings.
