FISH ROLL 
1/3 c. lemon juice
1/3 c. butter
2 tsp. salt
1/4 tsp. pepper
10 oz. pkg. chopped broccoli, steamed
1 c. shredded sharp cheese
8 fish fillets, fresh or frozen (2 lbs.)
1 c. cooked rice

Preheat oven to 375 degrees. In small pan, melt butter, lemon juice, salt and pepper. In medium bowl combine rice, broccoli, cheese and 1/4 cup lemon mixture. Divide broccoli mixture equally among fish. Roll up and put seam side down in shallow dish. Pour remaining lemon mixture over top. Bake 25 to 30 minutes.
