PUREED PARSNIPS 
2 (for each person) parsnips
1 tbsp. butter
Sprinkle of nutmeg

Peel, cut parsnips into 2 (3 x 1/2 inch) strips. Do not core. Microwave with butter 3 minutes on high or cover with boiling water, cooking until tender. Put into ricer. Spoon into bowl, adding butter. Sprinkle with nutmeg.

Since microwave ovens vary in power, you may need to adjust your cooking time.
