PINEAPPLE LOAF CAKE | |
1/2 c. butter 1 c. sugar 2 eggs, separated 1/2 tsp. vanilla extract 1/2 tsp. grated lemon rind 2/3 c. undrained crushed pineapple 1 3/4 c. sifted flour 1 1/2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt Cream butter until light and fluffy. Gradually add sugar and beat well. Beat in egg yolks and flavorings. Add pineapple and sifted dry ingredients; beat well. Beat egg whites until stiff, but not dry, and fold into batter. Pour into a 9 x 5 x 3 inch loaf pan lined with waxed paper. Bake in moderate oven (350 degrees) about 50 minutes. Cool; spread with Frosting. |
