BUTTERMILK COFFEE CAKE 
1 1/2 c. all-purpose flour
2 tbsp. Saco buttermilk powder
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1/4 c. soft shortening
1 egg, slightly beaten
3/4 c. water

TOPPING:

1/2 c. brown sugar
1 1/2 tsp. cinnamon
1/4 c. soft butter (1/2 stick)

Preheat oven to 375 degrees. Grease and flour a 9 x 9 inch pan. Sift the flour, Saco buttermilk powder, baking powder, soda and salt together and set aside.

In a separate mixing bowl, add the shortening and sugar and cream together until fluffy. Add beaten egg and beat thoroughly. Blend in water. Now add the dry ingredients and mix just until smooth. DO NOT OVERBEAT. Spread batter in pan.

TOPPING: Mix the brown sugar, cinnamon and butter together and sprinkle over top of the batter. Bake for 25 to 30 minutes or until tested done. Best served warm.

OPTIONAL: Add a fruit of choice, i.e., cherry, apples, blueberries, etc. to topping.
