LAYERED ZUCCHINI CASSEROLE 
2 c. zucchini, sm. chunked
1/2 c. each diced onion, celery, and parsley
2 c. sm. pieces tomatoes
1 c. grated Cheddar cheese
2 c. crushed cheese crackers

In a greased casserole or loaf pan, place a layer of small chunks zucchini to cover the bottom of the pan. Add layers of diced onion, celery, parsley, small pieces of tomatoes, grated Cheddar cheese, and crushed cheese crackers. Repeat layering twice. Bake in a 350 degree oven for 20 to 30 minutes for crunchy vegetables or 1 hour for well done vegetables.
