SQUASH CASSEROLE 
2 tbsp. butter
1/2 c. onion
Layers of zucchini or yellow squash (2 or 3 medium)
Layers of mozzarella cheese (about 8 oz)
Layers of sliced tomatoes (3 medium large)
1 tsp. sugar
1 tsp. salt
1/4 tsp. oregano, sprinkled on top
1/4 tsp. pepper, sprinkled on top
2 or 3 slices bread
butter
Parmesan cheese

Preheat oven to 350°F.

Melt some butter on the bottom of a casserole dish. Layer onions, squash, mozzarella cheese and tomatoes in a dish. Sprinkle with sugar, salt, oregano and pepper. Cut bread into small squares and mix with a pinch of basil. Sprinkle over vegetables and drizzle butter over bread. Sprinkle grated Parmesan over top.

Cover with foil and bake for 1 hour.
