SQUASH CASSEROLE 
8 yellow squash
2 small onions, diced
15 Ritz crackers, crushed
1 to 2 cups extra sharp cheddar cheese, diced
oil and butter for sauté

Preheat oven to 350°F. Prepare an 8x10-inch casserole dish with non-stick cooking spray (Pam).

Slice squash into small rounds and boil for 8 minutes or until just tender. Place squash in a layer in the casserole dish.

Sauté diced onions in butter and olive oil until soft and slightly brown then layer them over the squash. Sprinkle crushed Ritz crackers over the squash and onions, then distribute the diced cheese over this.

Bake at 350°F for 30 minutes until cheese is melted.
