SEVEN-LAYER CASSEROLE 
1 lb. pork sausage
1 1/2 c. raw potatoes, sliced
1 c. raw onions, sliced
1 c. raw carrots, sliced
1 c. raw zucchini, uncooked
1 1/2 c. canned tomatoes with juice
1 tsp. salt
1/8 tsp. pepper
2 tbsp. sugar

Brown sausage, drain excess fat. Place sausage in bottom of 2-2 1/2 quart casserole dish. Cover with layers of potatoes, onions, carrots, zucchini and rice. Add tomatoes with juice over top. Combine salt, pepper and sugar. Sprinkle over top. Bake, covered at 350 degrees for 1 1/2 hours.
